Lemon Potatoes

Lemon Potatoes are a Greek staple. The method is simple, it just takes a little time. But once they’re done you’ll be glad you did it.

LEMON POTATOES

SERVINGS: About 4

INGREDIENTS:

3 x Yukon Gold Potatoes 

2 x Lemons

1 Tsp My Astoria Kitchen Greek Blend

3/4 Cup Olive Oil

METHOD:

  • Preheat oven to 350 degrees

  • Peel your potatoes and cut them into quarter wedges 

  • Place in a 11x9 baking dish

  • Zest your 2 lemons right over the potatoes 

  • Add the juice of both lemons

  • Add your My Astoria Kitchen Greek Blend

  • Add 3/4 Cup Olive Oil

  • Mix well

  • Cover with tin foil- Bake for 1 hour covered

  • Uncover and toss in the oil- your potatoes should be nice and soft. Add a tiny bit of extra salt and pepper if needed

  • Return to the oven uncovered for another 20 mins

  • Enjoy!
